This coffee comes from the well known Colombia coffee growing region of Huila. The region of Huila is known for producing some of the best coffee in Colombia with extravagant flavors.

In 2022 we traveled to Colombia to participate in the Producer Roaster Forum (PRF), the first international coffee event in coffee growing countries with producers in mind. During this time we met many great people producing amazing coffees.
Finding someone growing an organic Pink Bourbon varietal is rare! This coffee stood out with its beautiful aroma and characteristics and felt the need to make it part of this limited release series for you. The coffee was produced in Huila at Finca Primavera by Fredy Correa and milled in Tolima by Forest Coffee, a small family run operation that processes beautiful coffee for producers looking to increase the quality of their cup.
In order to have quality coffees everyone that touches it has to do their special part, in this case the farmer nurtures the plant and produces coffee, the mill processes the coffee by washing and drying and sorting the coffee, and the roasters (us) roast it to bring out its unique characteristics for you to enjoy.
The quality of this coffee really stands out through its fruity flavors like Passionfruit, Mandarin, and Grape.
Semi-Washed
Most coffee we are accustomed to drinking is washed coffee. In the washed method, the coffee cherry is picked off the tree, depulped separating outer cherry from inner seed, washed to remove mucilage, fermented for 8-12 hours, and later set out to sun dry on a patio.
This Semi-Washed coffee, the cherry is picked from the coffee tree, the coffee cherry is rinsed and depulped and left to ferment for 12-36 hours. The coffee then passes through a quick rinse before it is set out to dry on raised beds with about 30% of mucilage still intact. Keeping the coffee with some mucilage allows sugars to adhere to the coffee bean (seed) and once roasted it gives the coffee sweet, fruity, and balanced flavors.
Roast Level
All limited release coffees are roasted to bring out the most unique and bright flavors of the coffee. Our "light & light medium" roast profile offers a beautiful balance of the coffee's complex flavors. These coffee's tend to be adventurous, we hope you enjoy the journey.
