INTRODUCTION TO MEXICAN COFFEE
Mexico has one of the most biodiverse ecosystems in the world, and we know that for centuries, small communities have cultivated coffee long before it became a trend. Coffee grown in Mexico, particularly from the Sierra Madre de Chiapas, earns its place as one of the best in the world, by the land, the people, and the hard work and commitment put into this labor.
What Makes Mexican Coffee Special?
The coffee that is grown in Mexico has conditions that hardly any other place can replicate:
- Altitude: High-elevation farms inside Chiapas, especially in El Triunfo Biosphere Reserve, slow down cherry maturation, and the coffee builds a natural sweetness and complexity.
- Volcanic and mineral-rich soil: The region of the Sierra Madre is known for producing clean, structured cups with distinct flavor.
- Most producers live on their farms, and focus on organic cultivation, taking care of their ecosystems and biosphere reserves.

Sourcing and Origin | Chiapas and La Tribu
At Mayorga, our Mexico coffee comes from our partners Café La Tribu, located in Chiapas, inside the El Triunfo Biosphere Reserve. They’re a community-led network of over 550 producers who live and cultivate this coffee on 1,800 hectares in the Sierra Madre de Chiapas.
Café La Tribu was founded in 2020 by a group of young farmers who wanted to revive coffee production on their lands and pass on the art of cultivating coffee to the next generations. It represents three cooperatives of Indigenous Tseltal-speaking communities, with 40% of the members being women.
We don’t currently offer a Mexico single-origin coffee. Instead, our La Tribu coffee from Chiapas is the heart of our Mayan blend: A medium roast that brings out the natural sweetness, chocolate and nutty character that makes this origin so distinctive.
We partner directly with café La Tribu. We don’t have middlemen and our coffee can be fully traceable. We’re proud of cultivating this relationship on shared values and aspiration for excellency in what we do.
