Introduction to Honduran Coffee
Honduras has become one of the most important coffee-producing countries in Latin America. Its quality and flavorful coffee come from the highland regions, where altitude, rich soil, and generations of farming knowledge produce coffee that is complex, naturally sweet, and deeply satisfying. At Mayorga, our Honduras coffee comes from our friends and long-time partners: the Capucas cooperative in the mountains of western Honduras. With over 15 years of partnership, this is one of the coffees we’re most proud to collaborate with.
What Makes Honduran Coffee Special?
- High Altitude: Coffee grown above 1,200 meters develops more slowly, concentrating sugars and producing a more complex cup.
- Rich volcanic soil: The western highlands of Honduras are famous for their mineral-rich terrain that gives our coffee a natural sweetness and depth.
- Small-farm culture: The Capucas cooperative operates family-sized plots, which means they devote themselves to their land and crops, giving them undivided attention, care, and consistency at every harvest.
- Organic and regenerative agriculture: No part of their land uses synthetic inputs or chemical fertilizers. They employ regenerative practices every season to care for the land, ensuring the soil gets the nutrients it needs to keep producing the highest-quality coffee beans. This is a long-term commitment, but one we’re sure benefits every single person involved in the process: from our farmers to our customers, who can make sure they have the cleanest coffee there is.

Sourcing and Origin: Capucas Cooperative
We’re proud to source our Honduras coffee directly from the Capucas cooperative: A producer-owned organization in the Copán region of western Honduras. Capucas’ producers have committed to regenerative farming practices that protect both the quality of the coffee and the health of their land.
This is a direct relationship. Without brokers or traders. We know exactly where the coffee comes from. Mayorga has worked directly with Capucas to ensure full traceability of every single coffee bean that arrives at our facility, and to guarantee that the people growing the coffee are compensated fairly, above Fair Trade prices.
