Capucas is our inspiring co-op partner in Honduras for over 12 years. Employing a large community, the co-op implements next-level regenerative farming practices and builds essential infrastructure like a school for local families.
To create our Decaf Honduras Capucas Coffee, we use the organic Swiss Water Process, a chemical-free method that gently removes caffeine using water and heat alone. The result is a smooth, medium roast coffee

If you want a full-bodied espresso but you don't like the shakes :^0 this is a nice, mellow, medium-roast bean that delivers an even taste - not too fruity on the light side, and not too chocolatey/roasty on the dark side. My wife likes the full decaf, and I often pair this with the regular Honduran bean for a 1/2-3/4 caff for myself. Works well too in a pour over, especially if you increase the recipe to ~70gm per liter at a "coarser" than normal pour over grind (not french press grind - between it and medium grind) - then 'shock' the bed of grinds with water just after a settled boil for the initial bloom, let it rest for ~45 seconds, then pour the rest of the water as you would through the bed at about 192 deg fahren. The process goes faster than you normally experience and you'll use more coffee. . . but the cup is awesome. That process works well too for pour-overs with their dark roasts.
It is said that organic coffee beans including Swiss water decaf organic beans are a super food, an antioxidant powerhouse filled with essential vitamins and minerals.
